If you have been around here for any amount of time, you know that we love and cherish weekends – slow mornings, cooking, or baking up something delicious.

I had some leftover cottage cheese, and on one leisurely Saturday morning I wondered what the results would be…. so we tried it and we loved it so much.

My kids couldn’t get enough of it and probably would’ve eaten the whole batch if I let them.

Cottage cheese is packed with protein, relatively inexpensive, and totally delicious – so it is a win-win all around.

We love topping these beauties with a pat of maple butter, pure maple syrup, macadamia butter, or when we are feeling really fancy – this simple homemade caramel sauce with pecans.

Cottage Cheese Pancakes | Grain-Free

A simple recipe for delicious fluffy cottage cheese pancakes.

  • 1 cup almond flour
  • 1 cup tapioca flour
  • 2 tsp grain-free baking powder
  • ½ tsp cinnamon
  • 2 tbsp maple sugar
  • ½ cup cottage cheese
  • 2 tbsp cultured buttermilk
  • 1 tsp vanilla extract
  • 4 pastured eggs
  • 2 tbsp unsalted butter for the pan
  1. Whisk all the dry ingredients together in a mixing bowl. Add the eggs, cottage cheese, buttermilk, and vanilla extract and mix well.

  2. Heat a large skillet over medium-low heat for 2 minutes. Add 1 tablespoon of butter to the skillet and swirl around to coat it.

  4. Serve with a pat of butter and some maple syrup. Or any other topping of your choice.
