I am not a fan of bananas – in fact if you know me well – I actually hate bananas. But my kids love it, so I had to develop a delicious quick banana bread recipe out of pure love and dedication. Bonus points for also being a grain-free banana bread recipe.

Whenever I started experimenting with this recipe, the smell was incredible from the beginning. My kids would sit in front of the oven with the light on, watching it bake and rise.

I will admit that I have eaten a slice or two and really enjoyed it (to my surprise) with a pat of butter. If I let them, my kids can devour an entire loaf of this quick banana bread recipe.

This basic grain-free banana bread recipe has many fun mix-in options; chocolate chips, walnuts, pecans, etc.

This recipe has the simplest and basic kitchen ingredients. So, you can make it on a whim over the weekend or on a rainy day without much pre-planning.

Another thing – since this is a quick bread, don’t use a blender to mix the batter together – that is a sure way to have a loaf of flat bread. Simply stir the ingredients together; you want a lumpy batter with no visible streaks of flour. This should be called lazy banana bread because the lazier you are with the mixing, the better the rise of the bread.  Oh, and on the rising topic, I use a simple homemade baking powder, which works great.

After testing a few of these loaves, we discovered that cutting the slices into cubes and slightly drying them out in the oven makes for a fantastic grain-free bread pudding – don’t forget the whipped cream.

Healthy Quick Banana Bread

This quick banana bread recipe (also grain-free) tastes amazingly delicious—the perfect crust with a light and fluffy middle.

  • 3 large ripe bananas, mashed
  • 4 eggs, room temperature
  • 2 tsp vanilla extract
  • ¼ cup butter, melted + cooled
  • 2 tbsp maple sugar
  • ½ cup tapioca flour
  • 1 ¾ cups almond flour
  • 1 tsp baking soda
  • ½ tsp baking powder
  • 1 tsp ground cinnamon
  • ¼ tsp sea salt
  • ½ cup dark chocolate chips, walnuts, or pecans {optional}
  1. Preheat the oven to 350°F and adjust the rack to the middle position. Line the loaf pan with parchment paper.

  2. Whisk together the mashed banana, eggs, vanilla extract, melted butter, and maple sugar in a large bowl. Add the rest of the dry ingredients. Gently stir the dry mixture into the wet until moistened, and no visible flour remains.

  3. Transfer the batter to the prepared loaf pan, and bake for 40 minutes until a deep golden brown and a tester inserted in the middle comes out clean.

  4. Allow the loaf to cool for 15 minutes, then invert the bread onto a cooling rack.

  5. Slice, and enjoy with a big pat of butter.
