Hi, you can shred the carrots ahead of time and put them in a glass dish with clean water. It should last 3-5 days. I suggest that when you scoop out some shredded carrots you replace the water with fresh water. You’ll have to experiment with what works for your schedule.

That sounds delicious. Cilantro has fantastic health benefits and we use a lot of it in our house. Hi Lorene, I generally recommend eating the raw carrot salad in between meals, however, getting it in when you are able is the ultimate goal even if means with meals. Enjoy!
This is absolutely delicious. I thought it would be boring or bitter. It was neither. It’s sweet, crispy, so good. Can I graded it with a spiral Lizer so it wasn’t long strips it was shorter, but that worked out perfectly. Can’t wait to have it every day. Thank you
