My kids love having waffles on the weekend – we live for leisurely Saturday mornings.  This is a nut-free waffle recipe that is delicious, yet simple to throw together.  These waffles are crispy on the outside but so light on the inside.

I have tried so many grain-free waffle recipes, and most of them were a sticky fall apart mess.  It was so disheartening and frustrating.

Go ahead and give them a try, you won’t regret it.

We love eating these waffles with some warmed maple syrup and a dollop of raw whipped heavy cream.

Fluffy Waffles {Grain-Free}

A simple and delicious grain-free waffle recipe.

  • 4 large pastured eggs, separated
  • ¼ tsp cream of tartar
  • ¼ cup grass-fed butter, melted
  • ¼ cup raw milk
  • 1 tbsp maple syrup
  • 1 tsp apple cider vinegar
  • ⅓ cups tapioca flour
  • 2 ½ tbsp coconut flour
  • 1 tsp baking soda
  • ¼ tsp ea salt
  1. Preheat the waffle iron to medium-high.

  2. In a medium glass mixing bowl, beat the egg whites with the cream of tartar on medium to high speed, until soft peaks form. It usually takes about 3-4 minutes. Set aside.

  3. In another glass mixing bowl, combine the egg yolks, melted butter, coconut milk, maple syrup, apple cider vinegar, tapioca flour, coconut flour, baking soda, and salt. Mix on low to medium speed until well combined – remember to scrape the sides of the bowl.

  4. Using a rubber spatula, gently fold the egg whites into the batter. Be careful not to deflate them.

  5. Follow the instructions that came with your waffle maker to know how long it should be cooked. Mine is generally about 3-4 minutes.

  6. Once cooked, use a fork to release the waffle from the waffle iron and transfer it to a baking sheet. Place the baking sheet in the oven (set to the lowest setting) to keep the waffles warm while you cook the remaining batter.

  7. Serve warm with a drizzle of warmed maple syrup and a dollop of raw whipped heavy cream.
