Our family has a love for slow weekend mornings, and a change-up in our regular breakfast choices. My kids also have a thing for pancakes in general, so of course, we had to come up with a chocolate variation.
These chocolate pancakes are light, fluffy, delicious, and oh so easy to make.
We love topping the with pure maple syrup, and a pat of homemade whipped cream.
Happy eating!
Chocolate Pancakes {Grain-Free}
A simple recipe for fluffy grain-free chocolate pancakes.
- 1 cup cassava flour
- ½ cup tapioca flour
- 2 tbsp unsweetened cocoa powder
- 2 tbsp maple sugar
- 1 tbsp grain-free baking powder
- ½ tsp fine sea salt
- 2 tbsp butter, melted
- 2 eggs
- 1 ¾ cups raw milk
-
Whisk all the dry ingredients together in a mixing bowl. Add the eggs, milk, and melted butter. Mix well.
-
Heat a large skillet over medium-low heat for 2 minutes. Add 1 tablespoon of butter to the skillet and swirl around to coat it.
-
Spoon the pancake batter (about a ¼ cup each) into the skillet and cook until the edges are set. It will be about 1-2 minutes. Flip the pancake and continue to cook until the second side is golden – another 1-2 minutes.
-
Serve with a pat of butter and some maple syrup. Or any other topping of your choice.
