For even more hands of experience, utilize your slow cooker. Follow steps 1-2 and add all the ingredients to the slow cooker bowl instead of a stock pot. Cook on low for 24 hours.
Chicken Bone Broth
This is a simple recipe for a nutrient-dense, deliciously gelatinous broth for sipping or soup-making.
- 1 whole chicken or 3 lbs of chicken bones
- 4 quarts of cold filtered water
- 2 tbsp apple cider vinegar
- 1 onion, coarsely chopped
- 2 carrots, peeled and coarsely chopped
- 3 celery sticks, coarsely chopped
- 1 bunch of parsley

If you are using a whole chicken, cut off the wings and the fat glands and remove the gizzards from the cavity. Cut the chicken parts into several pieces.

Place the chicken as well as the chicken pieces into a large stockpot. Add the vinegar, water, carrots, onion, and celery. Let it sit for 30 minutes.

Bring the pot to a boil, and remove all the scum that rises to the top. Reduce the heat, cover, and simmer for 24 hours.

About 10 minutes before the cooking ends, add the parsley.

Remove the whole chicken from the stock. Once cooled, remove the chicken meat from the carcass. You can use this meat for soups or salads.

Strain the stock into a large bowl, and refrigerate. Skim off the fat that has risen to the top. Transfer into glass containers and store in the fridge (up to 5 days) or freezer (up to 6 months).
